Awesome Homemade Chocolate Ice Cream
Remember that book that I mentioned that I was SOOOOO excited about because it was so cheap, and I got it???? Well in that awesome book, I found an even more awesome Chocolate Ice Cream recipe for around 95 calories per half cup-AND it tastes like real ice cream. My husband even said it passes the test! EVEN MORE AWESOME! We had the ice cream on Sunday with these Pumpkin Brownies (that are no-fat!), and it was an AWESOME combo (especially since I added semisweet chocolate chips to the brownies! YUM!)
Onto the recipe. The ice cream was all gone before I got a picture (we shared with friends...) so you will just have to trust me that it looks tasty, and give it a go.
Chocolate Ice Cream
from Cookinglight: Annual Recipes 2009
3 cups 1% low-fat milk
1/4 cup sugar
3 tbs cornstarch
1/8 tsp salt (I actually forgot to add this, and it tasted fine)
4 ounces semi-sweet chocolate, finely chopped (I used chips...)
1. Place 2 1/4 cups milk in a saucepan; bring to a simmer over medium heat. Combine 1/4 cup milk, sugar, cornstarch, and salt in a medium bowl and wisk until smooth. Slowly add sugar mixture to pan, stirring constantly with a whisk. Cook 4 minutes or until mixture begins to thicken, stirring constantly with a whisk. Remove from heat.
2. Place chocolate in a small bowl. Microwave 1/2 cup milk just to a boil (1-2 min). Pour hot milk over chocolate and let stand for 1 minute. Stir chocolate mixture until smooth. Add chocolate misture to sugar mixture; stir until well blended. Cover and chill 2 hours.
3. Freeze mixture in a ice cream freezer according to manufacturer's instructions. Cover and freeze 1 hour or until firm.
Yields: 1 1/2 quarts with a serving size of 1/2 cup.
