Whole Wheat Dutch Oven Pancakes

I have been craving these like crazy lately!  They have 5 ingredients, and they couldn't be easier make. This is something I grew up with and something I will always make.  Some people call them Dutch Babies, but we call them Dutch Oven Pancakes, even though we don't cook them in a dutch oven.  I've made one change: I use soft whole wheat flour in place of white flour to make them healthier.  I buy the soft whole wheat from Honeyvillegrain.com.  Its cheaper and they don't charge a bucket load for shipping-only 5 bucks for your entire order, no matter how much it weighs.  Anyhow, I use soft wheat for anything that doesn't need a high gluten content- like cookies, cake, muffins, quick breads, waffles, and these.  Anyhow, onto the recipe:
Dutch Oven Pancakes

serves two

1/2 cup skim milk
1/2 cup soft white whole wheat flour (you could use regular flour or regular wheat0
3 eggs
a dash of salt
2 tbs of butter

strawberries and sugar

Turn the oven on to 375 degrees. Grab two pie tins and at a tbs of butter (or less, just add some butter) to each and place in the oven.  While that is melting, blend together the milk, flour, eggs, and salt in a blender or with a mixer. Remove tins from the oven and pour half of the mixture in each.  Bake for 15-20 minutes, or until golden brown. 

I like this with sliced strawberries macerated in a bit of sugar, or its also good with a little powdered sugar and lemon juice.  Hope you enjoy!
