Whole "White" Flour
The other day I was reading one of my favorite blogs- foodstoragemadeeasy.net and there I found a recipe for the perfect flour mixture to substitute for regular white flour. I got really excited and skeptical all at the same time. Alhtough I've had a lot of success with whole white wheat substitutions in most of my recipes there is one recipe in particular that wheat flour just doesn't work it. My mom makes yummy dutch oven pancakes, and I've tried them with whole wheat, but they just don't puff up like I like them to. So, I was so excited when I found this mixture, and I hope it works!
The combination was found by Chef Brad. He says it works as a great sustitute for anything you would use white flour it, but he still uses whole wheat for yeast doughs.
Perfect whole "white" flour
2 cups each of pearled barely, spelt, and brown rice. Grind in a grinder.
When substituting use about 1/2 cup more for every three cups of flour in a recipe.
I'm so excited because one, it uses the whole grain I wanted to try this month-spelt. To add a double punch it uses barely which is something I've never used. I'm also excited to use brown rice as a flour, something that I've never done.
I'm also excited because if I can make a whole grain dutch oven pancake that puffs up and has the yummy browned edges that I LOVE I will be in heaven.
