Baked burritos

Today I made burritos tonight, and because Scott loved them, and I'm proud that I just kind of made up the recipe, I'm posting it here.


Baked Burritos
12 Whole grain tortillas (I used my whole wheat tortilla recipe with the whole white flour mix)
1 can beans (I used kidney beans)
cheddar cheese
1 zucchini finely shredded
1 lb chicken breast cooked in taco seasoning and shredded (it was around 2-3 chicken breasts)
fresh salsa blended
guacamole

1. First thing you do is spray a 9x13 pan with Pam then pour a thin layer of salsa on the bottom.
2. Assemble the burritos with everything except the salsa and guacamole.  Place in pan seam-side down.  3.Pour salsa on top and sprinkle cheese all over the top.
4. Bake at 350 for 20 minutes.
5. Top with guac and enjoy!

This recipe is really versitle. You can use any bean you want and any veggie you want, as well as any meat you want.  I actually used mozzarella instead of chedder because that's what I had on hand.  It was really a just throw what you have in the fridge in a tortilla, bake it, and add cheese kind of meal. Love those kind!  If you try it let me know what you think!
