Turkey Johnson and Alisa's veggie delight

Last night I tried a new recipe.  It was so delicious! I was telling my daughter about how many colors we were eating for dinner and counting 6 or 7 I think, so it has to be healthy, right?  The salad was so good, I actually had it for a snack today.  I never just eat veggies for a snack. Here it is:


Turkey Johnson
Adapted from Claire Robinson's recipe

1 lb ground turkey
1 can of beans, drained (I used Kidney, you can really use whatever you have on hand though.)
1 5 oz bag of spinach, again you can use any dark green here.  I think I'm going to mix it up next time and try something else!
1/2  to 1 tsp paprika
1 tsp oregano
2 cups low sodium chicken broth
spaghetti or rice.

Saute the turkey with paprika and oregano in a little oil.
Once the turkey is browned, add the broth and cook down by half.
Add the spinach.  I chopped it so it was harder for my daughter to take it out.  I have a veggie hater on my hands! :(
Eat over brown rice or whole wheat spaghetti, or just plain.  It was delicious!

Alisa's Veggie Delight

Chop as many veggies as you'd like ( did around 6 or 7 cups of mixed broccoli, red bell pepper, carrots, and tomatoes) and mix them together.

In another bowl whisk:
2 tbs mustard, I used a spicy mustard, or deli mustard would work too.
1/4 cup apple vinegar
1/4-1/2 olive oil
1/2 tsp paprika

Dress the veggies.  This dish is best if it sits for a few hours, but we had it right after I made it and it was good too.
