Coconut Oil

I am a believer that using healthy oils in cooking is a good thing-some fat is okay, as long as its good fat.  I've read more and more lately about Coconut Oil.  It contains good-for-you fats  Coconut oil has a higher smoke point than olive oil.  It melts at 75 degrees.  You can either buy it in the raw form, virgin coconut oil, which tastes like coconut, or the expeller-pressed kind that doesn't taste like coconut and still has the same benefits.  I bought this a few weeks ago and like how it cooks.  You can also use coconut oil to moisturize your body.  I've found a few recipes that include coconut oil in all sorts of things like body butter, shampoo, sunscreen, all sorts of things.  I'm excited to try it in more applications.  To find out more about coconut oil go here:tropical traditions

Have you heard of coconut oil?  Have you tried it?  What do you think?

Coconut oil rocks!!!! I use it in/for everything now! Be sure to try Artisana's coconut butter too! Sooooo yummy! I like to put blueberries in a small saucepan and heat them till they start popping - add cinnamon and nutmeg (a lot) and then a few spoonfuls of coconut butter. BEST Dessert EVER! My kids beg for it!
