100% whole wheat flour tortillas
I wrote this recipe down ages ago, and have wanted to make them, but have been lazy. Yesterday I wanted to make enchiladas*, and purposely did not buy tortillas, so I can make my own. They were not perfectly cicular, but they were sure tasty! I don't think I will ever buy tortillas again!

2 cups whole wheat flour
1 tsp salt
2 Tbs Extra Virgin Olive Oil
1/2 tsp baking powder
1/2 cup water (I used a little more than that).
Combine the dry ingredients (flour, salt, baking powder). Then combine the wet ingredients (olive oil and water). Add together. Knead to form a soft dough. Cover the bowl with a towel and let sit for 10 minutes. Divide the dough into twelve portions and roll into balls. Preheat a frying pan to medium-high heat. Roll out ball on a slightly floured surface. Cook on the pan (dry) for approxamately 30 seconds on both sides, until little brown speckles appear.

* I use Trainermomma.com's Turkey and bean enchilada recipe. So tasty! My husband loves them.
