Meatless Chili Mac


Sometimes I just do not want to eat meat.  I get sick of it-especially the handling of it, and the defrosting of it.  I have a few meatless recipes that I like, and this is among the favorites.

Meatless Chili Mac
adapted from TasteofHome Comfort Food Diet Cookbook

1 large onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1 tablespoon olive oil
2 cups water
1 1/2 cups uncooked elbow macaroni
1 can mild chili beans, undrained
1 can great northern beans, rinced and drained (I use white or kidney, what ever is on hand).
1 can (14 1/2 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
2 cans whole corn kernels
4 tsp chili powder
1 tsp salt
1 tsp ground cumin
1/2 cup fat-free sour cream (I use fat-free plain yogurt)

In a large saucepan or dutch oven, saute the onion, green pepper, and garlic in oil until tender.  Stir in the water, macaroni, beans, tomatoes, tomato sauce, corn, chili powder, salt and cumin.  Bring to a boil.  Reduce heat; cover and simmer for 15-20 minutes or until macaroni is tender.  Top each serving with 1 tablespoon of sour cream/yogurt. 

1 3/4 cup per serving at roughly 247 calories.
