Easy Potato Dinner
When I was growing up we probably had this dinner once a week. I decided to make it the other day for my family. Its super easy and super tasty. I don't have a picture. I ate it and realized I did not have a picture. Sad day. The ingredients aloen will have to entice you to try it
Exploded Potato (I don't remember what we called it)
1-2 two cups of steamed veggies per person (I had two cups of that consisted of carrots, yellow squash, zucchini, and green beens. Any veggie works. Broccoli, Bell Peppers, and Cauliflower also taste great).
1 potato, sweet potato per person (had had a sweet one my husband had a regular one)
1 oz chedder cheese per person (like like it sharp, and used reduced fat for myself)
a few tomatoes
ketchup and/or low-fat ranch
Mrs. Dash table seasoning
1. Steam the veggies until they are done. While the veggies are cooking, cook the potatoes in the microwave until they are almost done.
2. Take potato, and put it in a bowl. Cut it open and butter it (I did not butter mine, but I did butter the hubby's). Put as many veggies on it as you want, then some diced tomato. Sprinkle the top with Mrs. Dash, and then Cheese.
3. Zap it in the microwave until the cheese is melted. Slather it with a little ketchup or ranch. Eat it. This sounds so good I might have to go make it for dinner again tonight! Seriously though. You should try it too!
