Healthy Chicken Salad

This is a recipe that I go to whenever we go to the park, or Scott has a softball game-its something that I can make in a jiffy and take in the car easily.  This recipe is from So Easy by Ellie Krieger.  All of her recipes are healthy, she's a Dietician, and you might have seen her on Food Network.  Her cook book is pretty good, although a lot of the recipes are higher calories anywhere from 300-600 calories, so on maintanence mode, this book is great!  This is a super easy, low calorie recipe.



Waldorf Chicken Salad

1/4 cup walnuts
1/3 c plain yogurt
1 tbs mayonnaise
2 tsp fresh lemon juice
1 tsp Dijon Mustard
1/2 tsp thyme
1 cup cubed cooked chicken breast (about 1/2 pound, I use a 8 oz can chicken, which makes it easier!)
1 medium apple, unpeeled and diced
Salt and ground black pepper to taste (I actually did not add this the other day, and it tasted perfectly)

Toast the walnuts in a dry skillet over medium-high heat, stirring frequently, until fragrant, 3-5 minutes.
In a bowl, stir yogurt, mayo, lemon juice, mustard, and thyme until smooth.  Add chicken, walnuts, and apples.  Season with salt and pepper if you want.

This is so tasty on bread, or in a wrap, or on a bed of lettuce, whatever you like!

4 servings, 3/4 cup per serving
1 serving equals-140 calories.
