Chicken Noodle Soup
When my husband found out I was making his mom's chicken noodle soup last night he got pretty excited. I actually had something else planned, but I really just wanted some yummy comfort food. This is definitely a family favorite. Hope you enjoy!
Chicken Noodle Soup
adapted from my mother-in-law's recipe.
Ingredients:
2 chicken breasts
1 cup chopped celery
1 1/2 cups chopped carrots
1 cup chopped onion
4-6 chicken bouilion cubes
2-3 handfuls whole wheat egg noodles
1 cup uncooked brown rice, prepared according to package instructions
garlic salt
pepper
celery salt
Directions:
Cut chicken breasts into bite size pieces and place in a large soup pot. Cover with just enough water to cover the chicken. Bring to boil and cook the chicken. When the chicken is cooked, add celery, carrots, and onions, around 4-6 cups of water along with 4-6 boulion cubes (I did 5 last night. It depends on the day, this soup is kind of a throw it in type soup). Simmer for about 30 minutes. Add the noodles and cook till al dente or tender (my husband likes them cooked pretty pretty soft). Add the cooked rice. Then add the garlic salt, pepper, and celery salt to taste.
I would say this probably serves around 4-6 people, depending on the serving size you want.
