Dessert Friday Apple Brown Betty with Cinnamon Ice Cream

Okay, so I know that technically we aren't doing sweets besides days that start with the letter S (something that is so hard for me to grasp!  I like sweets on my weekends, and that includes Friday to me...hmmm, should I change the rule???  Treats are okay on the weekend?  What do you think?), but because I don't really post on days that start with S, I will post a dessert recipe today to get you ready fro the weekend...

I've wanted to try both of these recipes for awhile and decided that I finally would last Sunday.  They both were delicious!

Apple Brown Betty
adapted from Eli Krieger's book "So Easy"

5 large baking apples (I used Granny Smiths, the recipe calls for Golden Delicious), peeled and thinly sliced
1 cup apple cider
3 tbs brown sugar
1 tsp vanilla extract
1 tsp ground cinnamon
3 slices whole-wheat bread (1 oz eacy; crusts included)
3 tbls chopped walnuts

1.Preheat oven to 350 degrees. 
2. Combine apples, apple cider, 1 tbs brown sugar, vanilla, and 1/2 tsp of the cinnamon.  Cook over high heat, stirring occasionally until the apples are tender but maintain shape (around 10 minutes).  Stir in 1 tbs butter.  Pour into pie place or ceramic dish.
3. Place the bread in the food processor and process until crumbs are formed (I used my blender).  Melt remaining butter in microwave for 20 seconds.  Toss with crumbs, walnuts, and remaining brown sugar and cinnamon.  Scatter on top of apple mixture.  Bake for 30 minutes or until topping is crisped and lightly browned.

Servings: 6
Serving is 1 cup, 230 calories per cup

Recipe from Cathe Olson's book: Lick It!

1 1/4 cups soymilk or whole milk
2 (3-inch) cinnamon sticks
1 14oz can full-fat coconut milk
1/2 cup sugar
1/4 tsp cinnamon

Pour the soymilk into a small saucepan.  Add the cinnamon sticks and warm on medium-low heat, stirring occasionally, until the soymilk/ whole milk begins to boil.  Cover and remove from the heat and steep for 30 minutes.  Then remove the cinnamon sticks from the soymilk. 
Place the coconut milk and sugar in a medium bowl and whisk together.  Add the warm soymilk and the ground cinnamon and whisk until well combined.  Cover and chill in the refrigerator for at least 3 hours (I did for 2 I think).  Then freeze in an ice-cream maker according to the manufacturer's directions.
