Apple Cranberry Bread
When I think of heaven, I think of this bread. I LOVE it! Last week when I saw cranberries at the store I had to get them to make this bread. SO GOOD! With a few changes, I made this bread today. It comes from the Taste of Home Guilt Free Cooking cookbook.
Here's the recipe:
2 eggs
1/2 cup sugar
2 tbs applesauce
1/2 cups all-purpose flour
1 cup whole wheat flour (may try whole wheat next time...)
1 1/2 tsp bakign powder
1 tsp ground cinnamon
1/2 tsp baking soda
1/2 tsp salt
2 cups chopped peeled tart apples
1 cup fresh or frozen cranberries
1/2 cup chopped walnuts, optional
1. In a mixing bowl, beat the eggs, sugar, and applesauce. Combine the flours, baking powder, cinnamon, baking soda and salt; add to the egg mixture until just combined (it will be a thick batter). Stir in the apples, cranberries, and walnuts.
2. Transfer to an 8 in x 4 in x 2 in loaf pan coated with cooking spray. Bake at 350 for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
Yields 16 servings
with walnuts: 110 calories per slice
without walnuts: 86 calories per slice (that's what I'm talking about!!!!!!)
