Southwestern Stuffed Acorn Squash

Sorry for the week-long absence!  My parents were all in town.  I loved having them here, and hated seeing them go this morning!  My wonderful parents helped me make 42 quarts of applesauce (apples picked from a local apple orchard-so fun!).  The best part is that it is sugar free (without added sweeteners, awesome!), and I did not have to do it by myself-also awesome.  They were a great help to me!  My mom also showed me a little about sewing as she worked on our costumes.  I learned how little I really knew about sewing-and the costumes were supposedly simple, or so my mom kept telling me.  Hey, if I can lose 50 pounds of weight, surely I can learn how to become a superb sewer right????????



Now, to what this post was really supposed to be about, When my parents were here I warned them that I was going to try some new recipes for them to test.  One such recipe I tried was the Southwestern Stuffed Acorn Squash.  Winter squash is in season right now and I have not been quite sure how to use it.  My husband is not a huge fan, but it is cheap, so I buy it.  After he ate this he said, "Heck, I will eat squash any time if its cooked like this!".  It was so scrumdidly-umptious (sp? if there is a correct spelling... :) and will probably be on our menu every week/ or every other week, because it was so tasty.  And, hey my husband liked it!  If you try this recipe, tell me what you think!
