Homemade Whole Wheat Noodles
Another pictureless post. Really, I will get better at it. I promise! We love lasagna at our house and I made this recipe yesterday, posted by the trainermomma. It is only 227 calories per serving. Its loaded with veggies, and its tasty. I made it with homemade noodles. You are probably thinking, "There goes crazy Alisa making things from scratch again..." Ya, I probably am crazy, but when it cooks in half the time, and when I can't find whole wheat lasagna noodles at the store, I make them. It is SO EASY.
The recipe is adapted from Kelsey's essentials on the Cooking Channel:
Whole Wheat Pasta recipe
2 1/2 cups whole wheat flour
3 eggs
1/2 tsp salt
1/2 tsp olive oil
enough water so its not dry. (any where from 1/4 cup to a half, depending on what it looks like...)
Mix all of the above and knead for about 8-10 minutes. Let rest for 30 minutes.
Cut into about 3 sections. To roll dough out, place flour on your counter, and roll the dough out into a paper thin sheet (another reason to make this, its super good exercise!).
For lasagna:
place the rolled out sheet in the baking dish (I used 9x13), take a pizza cutter, and cut the excess dough off (I jsut run it along the side). This way you only end up making 2 big sheets of noodles instead of a dozen small sheets. Much easier in my book! I cooked the lasagna in about 30 minutes instead of the suggested 1 hour because the noodles were fresh. Another great reason to make homemade noodles!
For other pasta:
Simply roll the dough out paper thin and cut it to the sizes you would like. Fettuchini would probably be fairly easy to try. Once they are cut, boil a saucepan of hot water. Add a little salt and let the pasta cook for about 1 minute or until it floats. Talk about quick pasta!
Oh please try it! So much easier than you think! And the whole wheat homemade noodles tastee ten times better than the store bought whole wheat noodles! YAY!
