Baked Eggs and Ham
I got this recipe out of the "Kids' fun and healthy Cookbook" by Nicola Graimes. I HAD to buy this cookbook for my children's lit class. I know, painful reading, huh. ;) There are many good recipes in it. I have only tried a few so far, but hope to try most, if not all of them, eventually. The instructions have pictures for each step, which is wonderful, especially for kids. There are a lot of fun recipes, and I think that they are all ones that kids would like, especially if they help make it. This recipe is SUPER easy. From the time I started dinner to the time we had it on the table, it was around 12 minutes. SWEET! It would be great for breakfast or lunch as well. I can't wait to make it again!
Baked Eggs and Ham
4 slices of ham, (I use sara lee low-sodium honey ham, thinly cut from the deli)
4 eggs
1. Preheat oven to 400 degrees. Lightly spray four holes of a muffin tin with Pam.
2. Arrange a slice of ham in each hole. Carefully trim the slices to make them even but make sure the ham is still slightly above the edge of the tin.
3. One by one, crack an egg into a small bowl and pour it into each ham-lined hollow. Bake in the oven for 10-12 minutes, or until the egg has set.
4. Take out, remove and eat!
My husband and I had two each. Each pie is 86 calories. Add some veggies, and you have a low calorie meal that is easy and tastes super yummy! I'm definitely doing this again.

We loved the recipe at my house! I like your idea of covering them with tin foil to avoid burning. I will try that next time.
