National Egg Day
Apparently, its national egg day. So, I am planning on having some eggs later today. I get a daily email from http://www.hungry-girl.com/, and they send me all sorts of recipes. Today, I got recipes for eggs, because according to them it is national egg day. Who knew? The hungry girl is all about egg mug recipes. Pretty much, you just microwave the eggs and viola, your done. So I think I might try one, or two of the following recipes:
Pizza Egg Mug
2 tbsp canned crushed tomatoes
1/8 tsp Italian seasoning
1/2 c egg whites
1-2 tbs mozzarella
6 slices turkey pepperoni chopped
1/2 tsp shredded Parmesan
1. Season tomatoes with Italian Dressing and set aside.
2. Spray microwave safe mug. Add the eggs, and mozzarella. Microwave for 1 minute
3. Stir and microwave another 30 seconds
4. Mix in tomatoes and pepperoni and microwave another 30 seconds until scramble is set. Sprinkle with Parmesan topping and eat!
Yields: 1 serving at 134 calories!
Its all Greek to Me Egg Mug
1/2 cup chopped spinach
1/4 cup chopped red onion
1/2 c egg substitute
2 tbsp diced tomatoes
2 tbsp feta cheese
1/2 tbsp chopped fresh basil
1. Spray mug. Add spinach and onion and microwave for 1-2 minutes until softened.
2. Blot the excess fluid off the veggies. Add eggs and microwave 1 minute.
3. Stir gently. Add all other ingredients and lightly stir. Return to microwave for 45-60 seconds until set.
4. Gently stir and cool slightly. Enjoy!
Yields: 1 serving. 117 cal a serving. That is what I'm talking about!
