Greek Salad Wrap, or salad
This is something I like to have when I want a salad, but I don't want just the normal throw-together-salad. Its yummy, yummy, yummy! And it uses the Tapenade recipe I posted yesterday! AWESOME!
Greek Salad Wrap
Flat Belly Diet Cookbook
1 whole grain tortilla
2 tbs fat-free greek-style (or plain) yogurt
1 tbs Tapenade
1 1/2 tsp freshly squeezed orange juice
1/4 tsp freshly grated orange zest
1 1/2 cups loosely packed baby spinach
1/4 cup grape tomatoes, halved
1/4 small cucumber, peeled, halved, seeded, and sliced
1 tbs crumbled feta cheese (or I use 2 oz canned chicken, I do this when I don't have feta)
1. Whisk together the yogurt, tapenade, orange juice, and orange zest in a large bowl. Add the spinach, tomatoes, and cucumber and toss to coat well.
2. If you want a wrap, just add the mixture to the top of the wrap and sprinkle with cheese or chicken. Fold and eat.
3. If you want a salad, I like, to pop the wrap under the broiler on each side until it gets crispy. Take it out and let it cool for a few minutes. Once cooled, break up the wrap into chip-sized pieces. I like to "dip" my chips into my salad and eat it that way (its like having chips and salsa, but not because its baked chips and salad. I LOVE eating salad that way!).
