Killer Vanilla Ice Cream Recipe

Okay, so I know I haven't posted recipes this week.  I'm sorry!  Preparing for the move, and for our vacation to South Carolina, as well as hanging out with my friends before I go.  Its a lot to do.  But, I ALWAYS have time to cook/bake.  Yesterday I decided to try to create a low-calorie vanilla ice cream using the low calorie Chocolate Ice cream recipe that I absolutely love as a guide.  So, I omitted the chocolate and added vanilla.  Guess what?  IT WAS AWESOME!  And guess what?  The calories are EVEN LOWER than the chocolate ice cream.  I am talken, you can have more than a half cup without feeling guilty!  AWESOME!  I chopped up Dark Chocolate Pepperment bark as the mix in and it so yummy!  Oh, and sorry I know its strange to be having Ice Cream when it is cold outside, but I love it so much, and I just can't say no to homemade ice cream.  So, hope you enjoy!  Let me know how it goes for you!

Homemade Vanilla Ice Cream
Adapted from Cookinglight: Annual Recipes 2009

3 cups Fat-Free Milk
1/4 cup sugar
3 tbs cornstarch
1/8 tsp salt (I actually forgot to add this, and it tasted fine)
1 1/2 to 2 tsp vanilla (depends on how strong you want it...)
1. Place 2 3/4 cups milk in a saucepan; bring to a simmer over medium heat. Combine 1/4 cup milk, sugar, cornstarch, and salt in a medium bowl and wisk until smooth. Slowly add sugar mixture to pan, stirring constantly with a whisk. Cook 4 minutes or until mixture begins to thicken, stirring constantly with a whisk. Remove from heat.

2. Cover and chill 2 hours in the fridge.

3. Add vanilla and freeze mixture in a ice cream freezer according to manufacturer's instructions. Cover and freeze 1 hour or until firm.

Yields: 1 1/2 quarts, 16 1/2 cup servings.

35 calories a half cup. Ya.  That's right.  That means 1 cup of ice cream is only around 70 calories a pop! Isn't that just awesome!  Please try it out.  Please do!  Let me know what you think!
