Applesauce Muffins
I used this Applesauce Bread recipe from Heavenlyhomemakers.com to make my applesauce muffins. I like quick breads, but I always find that they burn a little, because the middle takes so long to cook, so I like to make them into muffins-individual portions is better anyhow because it helps you control your portions better. I think I might have a new favorite muffin. That's how tasty they were. So, for your eating pleasure, here is the recipe, muffin style:
APPLESAUCE MUFFINS
1 1/2 c whole wheat flour
1/2 c honey
1/2 t baking powder
1/2 t baking soda
1/4 t sea salt
1 t cinnamon
1/2 t nutmeg
3/4 c unsweetened applesauce
4 egg whites
1/4 c butter melted (I used margarine, of course)
Mix the dry ingredients together. Make a well in the center then put applesauce, eggs, and butter in the well. Poor in pam-ed muffin tin. Bake at 350 degrees for 20 minutes or until golden brown on top.
Yields 12 muffins.
79 cal a muffin-score! And, I didn't even change the recipe! Double Score! They are SOOOOOOOO GOOD!
