Whole Wheat Honey Bagels
What a success! I am so proud of my bagels! They turned out really well! I also got this recipe from Heavenly Homemakers. I am going to make a few changes with timing next time, and there will be a next time, they were tasty little guys!
Whole Wheat Honey Bagels
4 to 4 1/2 cups whole wheat flour
2 1/4 tsp yeast
1 1/2 c warm
3 Tbs plus 1 Tbs honey
1 tsp salt
6 tsp vital wheat gluten
1 Tbs Dough Enhancer
1) Stir together 2 cups of flour, salt, and yeast. Add water and 3 tbs honey. Gradually add remaining flour.
2) Knead the dough (I did this in my mixer) for 10-ish minutes (its the magic number for kneading I think) until it is smooth and elastic.
3) Cover and let dough rise for about 10 minutes.
4) Divide the dough into 12 equal parts (I just eyed it, we have some little guys in the batch though, which is okay by me!)
5) Set a timer for 20 minutes and begin shaping each piece of dough into a ball. Stick finger in middle of the ball and make the hole 2- in wide.
6) Lay on buttered (I used Pam) cookie sheet. Let sit until timer goes of. Start a big pot of water boiling.
7) Turn broiler on and broil bagels for 1 1/2 minutes on each side (I did the recommended 2 min on each side, which is why my bagels are dark-warm oven thing going on).
8) Add 1 Tbs of honey to the boiling water. Simmer bagels for 3 1/2 minutes on each side. Let them dry on a towel.
9) Bake at 375 degres for 20-30 minutes (I only did 20 and that seemed sufficient) until tops are golden brown.
151 calories per bagel- lower than normal sized bagels at the grocery store. Yay! And they taste just as good, if not better! My husband even said that these are keepers (he likes his plain white bagels from the store, so this was a real win in my book!).
For a bread recipe these are not that difficult. I loved them! Let me know what you think!
