Snickerdoodles
I adapted this recipe from HeavenlyHomemakers.com. Her Snickerdoodles recipe is really good. I did make a few changes to the recipe to make it slightly healthier, but ever so slightly. Here is the recipe as I did it.
SNICKERDOODLES
by Heavenlyhomemakers.com
1/4 c butter, melted
1/4 c applesauce
3/4 c sugar
2 egg whites
1/2 tsp vanilla
1/4 tsp baking soda
1/4 ts cream of tartar
1 1/2 c whole wheat flour
2 Tbs sugar mixed with 2 tsp cinnamon
1) Mix the butter, applesauce, and sugar together.
2)Then add the egg whites, vanilla, baking soda, and cream of tartar.
3)Mix, then ad the flour and mix well.
4)Chill in the Freezer for one to two hours (it is a really soft dough, and needs to harden a little to make the balls).
5) Roll into 1-in balls, then roll into sugar mixture. Bake at 350 degrees for 7-10 minutes (I did seven, my oven cooks hot, and we like our cookies a little gooey) or until golden brown.
Yeilds about 2 dozen cookies. 56 calories a cookie. SCORE!
These cookies are seriously tasty! I LOVE cinnamon, so they are winners for me. If you want more butter, less applesauce, and more sugar then look at the original. I really love these cookies-they are probably up there with some of my favorites-like chocolate gingersnaps. Yum!
