Whole Wheat Graham Crackers


These graham crackers turned out pretty good, if I do say so myself!  There are some minor changes that I made:
I only used 1/4c plus 2 tbs of sugar, instead of half cup.  I think it tastes fine.
Instead of a stick of butter, I used 1/4 c + 2 tbs unsweetened applesauce, and 2 tbs butter.
I added 1/4 cup cocoa-of course you could leave this out, but surprise, I wanted it chocolatey!
I only used 2 Tbs Honey, and then added 2Tbs Molasses- It tastes kind of like gingerbread!  Yum!  You don't have to use the Molasses, it would be more honey-ish without.  Maybe I won't use it next time, there's no tellin!
Yields: 35, 2-in squares
chocolate graham crackers: 51 cal a cracker-almost exactly as much as calories as a regular 2-in square of graham crackers!
Regular Honey Graham Cracker: 49 calories. 
 The only con I found, was that if you leave the crackers in the oven for too long, they can get to a point where they are too hard, where you might break your teeth if you bight into it.  I would recommend just taking them out of the oven right after the 15-18 minutes are done.  I think they will crisp up fine.  They are too hard if you keep them in the oven afterwards. If you want them extra crunchy do it how she recommends.  I would also try and roll it as flat as you can- mine are fine, although next time I might try and do them a little thinner. 
Next time I am going to poke um, like regular ones. 
I have done a little more research, and the should be rolled out to about 1/8 in.  I think that they will cook better next time. 

All in all, a great success!  I can't wait for Scott to try them!  They are yummy!  I had them for my morning snack!  Mmmmmmmmmmmmm....
