Yummy Sunday Dinner
Yesterday I wanted to make a real Sunday dinner. The last few sundays have been lazy in that department. We hadn't eaten all day because of fast Sunday, so I wanted it to be special. I made sweet potato yeast rolls: Baja Chipotle Chicken (I just used a marinade), Bok Choy Slaw (bok choy was part of the under 1 dollar per pound produce, so yummy!), and Mashed Cauliflower (really good, I actually kind of tricked myself into thinking it was mashed potatoes! Scott made himself some mashed potatoes from the food storage).
Creamy Mashed Cauliflower from Eatingwell.com
8c bite sized cauliflower florets (about 1 head)
4 cloves of garlic, crushed and pealed
4 tsp Extra Virgin Olive Oil divided
1 tsp butter
1/2 tsp salt
1. Steam cauliflower and garlic in steamer basket and steam until very tender.
2. Place the cooked cauliflower and garlic in a food processor or blender. Mix with the other ingredients. Drizzle remaining 2 tsp oil and garnish with chives.
4 servings. 3/4 c per serving 107 cal per serving.
Crunchy Bok Choy Slaw, also from eatingwell.com
1/4 c rice vinegar
1 tbs toasted seseme oil
2 tsp sugar (I used honey)
2 tsp Dijan Mustard
1/4 tsp salt
6 cups very thinly sliced bok choy (about 1 head)
2 medium carrots, shredded
2 scallions (I did not have these, and it still tastes great!)
1. Whisk vinegar, oil, sugar, mustard, and salt in a bowl until sugar dissolvesw. Add bok choy and carrots and scallions.
8 servings, 3/4 c 33 cal per serving.
Sweet Potato Yeast Rolls from Guilt Free Cooking by Taste of Home
1 package of active dry yeast
1 cup warm fat-free milk (110-115 degrees)
1 tsp plus 1/3 cup sugar, divided
1/3 cup cold mashed sweet potatoes
2 eggs seperated
2 tbs softened
3/4 tsp salt
3 1/2 to 4 cups all-purpose flour
4 tsp cold water
1 tbs seseme seeds (I did not use these)
1. In a large mixing bowl, dissolve yeast in warm millk. Add 1 tsp sugar; let stand for 5 minutes. Add the sweet potatoes, egg yolks, butter, salt, remaining sugar, and 2 cups of flour. Beat until smooth. Stir in enough remaining flour to form a soft dough
2 Turn onto a floured surface; knead until smooth and elastic, about -8 minutes. Place in a bowl coated with cooking spray, turning once to coat top. Cover and elt rise in a warm place until doubled about 1 1/2 hours.
3. Punch dough down (so fun!). Turn onto a lightly floured surface; divide into 30 balls. Roll each ball into a 10 in rope; tie each rope into a loose knot. Place 2 inches apart on baking sheets coated with cooking spray. Cover and let rise until doubled about 30 minutes.
4. In a small bowl, beat egg whites and cold water; brush over rolls. Sprinkle with seseme seeds. Bake at 350 degrees for 15-17 minutes or until lightly brown. Remove from pans to cool on wire racks.
I LOVED these rolls. I wished they took less time, but it was well worth the effort!
