Worried

I have gained the reputation among my peers here in Hobbs as a good baker. I guess I have kind of brougth it upon myself. I mean, it is a good compliment, and every time I have baked something I have created a healthier version of the recipe, it just comes with the consequence of baking more than I should. You see, everytime I bake, some of the batter goes in my tummy (you have to taste it to make sure its right, right?), and some cookies go in my tummy (that's usually what I bake), and then where ever I take them to, more cookies go in my tummy (because I trust that they are more healthy than what others have made, or I just know what is in them). I always offer to bake, because I am lactose intolerant, and because I will make healthier treat (if there is such a thing). Anyhow, I have been baking a lot lately. Our friends are having us over and we got asked to bring something sweet again. So, I am going to make Almond Honey-Butter cookies. It calls for whole wheat flour (if it didn't I would substitute half of the all-purpose flour for whole wheat), and in place of the 1/3 c oil I am going to do applesauce instead, and in place of butter (can't have it), I am going to do the Smart Balance butter (at 50 cal a tbs). Before the substitutions they were 90 cals a cookie, but now they will be 71 a cookie. So they are less fat and less calories. Score!

I will let you know on Monday how they turned out. Cross your fingers!

Then, tomorrow we are celebrate little girl's b-day with the family, so I got to bake a cake for that. If any of you have a healthy yummy cake recipe, let me know. I am in the search for one. I found a few, but I don't know if I like them. We shall see!

After this weekend, I am going to take a few weeks break from baking. I have 7 more pounds to go, so I need to be better for the next little while. Can't wait till I am done losing weight!

I wish I could bake. The only thing I can do well that doesn't come from a box is this particular recipe for chocolate chip cookies. (that doesn't include powdered sugar, Scott might remember that insident, that no one ever let me live down) But other then that, what ever I bake is not good. I can cook. Main and side dishes (pretty well, if I might say so). But baking is my down fall. So, that is great that you can not only bake but change up the recipe so that you can make it healthier for everyone.
