Chicken Tomatillo Soup and Fiber Bars
I am addicted to the stuff! I made it last night again per Scott's request, and I am certainly glad I did. And, there is not a lick of unhealthy-ness in it. I have also decided that I love tomatillos, but I don't like walmart for not having many of them. You think I would have learned by now that produce is way better at Albertsons than Walmart, and yet I still go to Walmart. Anywho, you can get the Chickent Tomatillo Soup recipe at Just a Mom, Ha! It is to dye for, really. You know that Chicken Tortilla Soup at Chilli's? It tastes like that, only better and its healthier! LOVE IT! We like to broil tortillas in the oven till they get crispy to make tortilla chips, and then we put it over the soup. YUMMY! I am addicted to broiled tortilla chips! So much better than the chips you get in the bag!
Something else I made, per my own request (and my own desire to bake SOMETHING-I needed to, it was not a want, but a NEED, they are completely different...), I made homemade fiber bars from Trainermomma.com. You might need to go to the recipes tab, and this recipe will be under the "snack ideas" section labeled "fiber bars". During school, my stress levels are high, and when they are my IBS acts up, meanin I need something to move things a little bit more than I usually do, so I have really been packing on the fiber. I was interested to try these fiber bars. I put chocolate chips in mine, but actually think I might try putting only a cup next time to lessen the calories, and a little bit of chocolate goes a long way (I know coming from me, that seems kind of weird huh), but it is true. I can have a little bit today and a little bit every day and still get the same fix, and less of a tummy ache, then I would eating a ton of it in one sitting. Stretching it out is the way to go... Anyhow,
Both of these websites are amazing for recipes. I have tried quite a few of them. The pumpkin chocolate chip cookies and muffins are really good on trainermomma's websited (even better because they are usually whole wheat!). I always am happy to have new recipes to try (I guess I have already established that, huh?). Hope you like them!
